
Thai Red Peanut Curry

A cozy, aromatic Thai-inspired curry with tender chicken simmered in creamy coconut milk, red curry paste, and nutty peanut butter powder.

Heat a large pan or pot. Add the oil and sauté the onion and garlic until fragrant (1-2 minutes), then push to the sides of the pot.
Add the red curry paste and cook it for a couple of minutes while stirring to get it fragrant throughout.
Stir in coconut milk and chicken broth.
Whisk in the peanut butter powder.
Then, stir in the chicken pieces and fish sauce. Continue simmering until the chicken is cooked (about 10 more minutes). Remove the lid and taste the curry. Add a teaspoon of brown sugar for more sweetness, a dash of cinnamon, and lime juice.
Serve with rice, quinoa, air-fried sweet potatoes, broccoli, green beans. Up to you!
