For the peanut dipping sauce

Heat a large pan over medium heat. Spray with avocado oil and add the ground beef and chopped green onions.

Break up and cook the beef until browned and fully cooked.

Add the peanut powder, soy sauce, minced garlic, and sweet chilli sauce. Mix until combined.

Taste and add salt if needed. Set the beef aside to cool to room temperature before building the summer rolls.

To make the peanut sauce, whisk together the listed ingredients except the water until combined and no chunks of peanut powder remain. Add the water slowly to your desired sauce thickness.

Fill a large container or plate (with a lip) with water and dip the first rice paper for 10-20 seconds. Lay the rice paper on a clean spread out dish towel.

Add the lettuce, 1/8th of the beef mixture, a drizzle of sriracha, and julienned cucumbers.

Fold one side of the rice paper over the fillings, tuck in both sides, and roll forward like a burrito. The rice paper should stick to itself and seal completely. Roll them in sesame seeds or just sprinkle the seeds on top.

Serve with the peanut dipping sauce on the side and slices of lime.
