
Street Corn Ground Beef Bowls

Hearty bowls layered with taco-seasoned ground beef, crispy sweet potatoes, and a creamy charred street corn salad for the ultimate Tex-Mex dinner.

Roast sweet potatoes
Preheat air fryer to 425F. Chop washed sweet potatoes into small cubes. Season with avocado oil, paprika, garlic powder, onion powder, salt and pepper. Air fry for 12-15 minutes or until soft.
Cook the beef
Heat a pan over medium high heat with avocado oil. Add 1 pound of ground beef and cook until browned. Add a packet of taco seasoning (reserve 1/2 tsp) and 1/4 cup water. Mix, cover, and keep on low heat until ready to serve.
Start the street corn
Add a drained can of corn to a pan sprayed with avocado oil. Season with tajin and garlic powder.
Char the corn
Leave corn to char for 2-3 minutes before mixing it around in the pan. Allow to slightly cool before mixing with the other ingredients.
Mix the street corn salad
In a bowl, mix charred corn, Greek yogurt, cottage cheese, lime juice, chopped jalapeño, tomato, avocado, 1/2 tsp taco seasoning, paprika, red pepper flakes, and salt. Add 1/4 cup feta or cotija cheese and mix.
Serve
Serve topped with hot sauce and pickled red onions and enjoy!
