Tender baked sweet potatoes loaded with taco-spiced ground chicken and a creamy charred street corn salad. This is a cozy, protein-packed bowl bursting with flavour.

Bake the sweet potatoes
Preheat the oven to 400°F. Start by chopping washed sweet potatoes into halves. Spray a sheet pan with avocado oil and place the potatoes cut side down in the oil, moving them around to coat. Season with salt and pepper. Bake for 25-30 minutes or fork tender.
Cook the chicken
Heat a pan over medium high heat with avocado oil. Add in 1 pound of ground chicken and cook until browned. Add in a packet of taco seasoning (reserve 1/2 tsp) and 1/4 cup water. Mix. Cover and keep on low heat until ready to serve.
Start the street corn
Heat a pan over medium heat. Make your street corn by steaming the frozen corn in the microwave, drain and add to the pan sprayed with avocado oil. Season with paprika and garlic powder.
Char the corn
Leave corn to char for 2-3 minutes before mixing it around in the pan. Allow to slightly cool before mixing with the other ingredients.
Mix the street corn salad
In a bowl, mix charred corn, greek yogurt, cottage cheese, lime juice, chopped jalapeno, tomato, 1/2 tsp taco seasoning, paprika, garlic powder, and salt. Add in 1/4 cup feta/cotija cheese and mix.
Serve
Serve topped with hot sauce and pickled red onions and enjoy!
