Spinach Feta Egg Bites

Fluffy, protein-packed egg bites loaded with spinach, feta, ham, and juicy tomato — perfect for meal-prep breakfasts on the go.

Preheat oven to 350°F and spray a silicone muffin tray with oil.

Blend the eggs, egg whites, cottage cheese, garlic powder, salt, and pepper until smooth.

Place equal amounts of spinach, feta, ham or turkey, and tomato into each muffin cup.

Pour the egg mixture equally into each cup.

Use a fork to gently mix the ingredients in each cup.

Top each cup with red pepper flakes, if using.

Bake for 20–25 minutes, until cooked through.

Let the bites sit in the silicone trays until cooled, then pop them out. Letting them cool in the tray helps them hold together when you remove them. To reheat, place 2–3 on a paper-towel-lined plate and microwave for 45–60 seconds, then top with your favourite hot sauce.
