
Spicy Garlic Peanut Noodles with Chicken

Saucy egg noodles tossed with juicy chicken, crisp veggies, and a creamy garlic-peanut sauce with a sriracha kick.

Heat a large pot over medium heat and lightly spray with avocado oil.
Add diced onion and cabbage mix and cook 5–7 minutes until softened. Remove from the pan and set aside.
In the same pan, spray with oil again and add chopped raw chicken (season with salt, pepper, paprika, and garlic powder to taste).
As the chicken cooks, boil a small pot of water to cook the noodles. Fresh egg noodles only need 4-5 minutes to cook.
Whisk the sauce ingredients together until no clumps of powder are left.
When the chicken is cooked to an internal temperature of >165°F, remove from the pan and set aside to rest.
Pour your sauce mixture into the pan, and add ~1/4 cup of water from your noodles. Heat on medium-low until sauce thickens and your noodles have finished boiling.
Chop or shred the chicken into bite-sized pieces. Add the diced chicken, steamed broccoli, sweetcorn, cabbage mix, and noodles to the pan. Mix to coat everything in the sauce.
Serve hot with sesame seeds and green onions on top.
