
Southwest Chicken Tacos with a Crunchy Cheese Shell

Creamy southwest chicken filling tucked into mini tortillas and wrapped in a golden, crispy cheese shell for the ultimate taco upgrade.

In a large mixing bowl, combine the Greek yogurt, mayo, lime juice, salsa, Tabasco, and seasonings. Mix until fully combined.
Add the shredded chicken, beans, corn, red onions, and diced jalapeños. Mix again, taste, and adjust seasonings.
Put 1/8th of the mixture onto each mini tortilla and fold in half.
To upgrade these tacos, heat a large pan over medium heat. Spray with avocado oil spray and sprinkle about 1/4 cup shredded cheese in the shape of your tacos.
Allow the cheese to melt for 1-2 minutes, then place a taco on top of the cheese and cover with a lid. Allow the cheese to get golden brown, then flip and brown the other side of the taco (about 2-3 minutes per side).
Serve with salsa on the side!
