Ingredients

For the squash mash

For the sirloin beef in gravy

For the roasted carrots

Instructions

1

Preheat the oven to 425F.

2

Cut the acorn squash into quarters, scoop out the seeds with a spoon, and spray the inside with avocado oil. Season with salt and pepper and place face-down on a tinfoil-lined baking sheet.

3

Cut the top of the peeled carrots off, and slice them in half. Spray with avocado oil, then add the seasonings and toss until coated. Drizzle the honey over the carrots and toss again.

4

Add the carrots to the baking sheet with the squash.

5

Bake the squash and carrots for 30-35 minutes or until fork tender and lightly browned. Make sure to flip the carrots halfway through the cooking time. (Do not flip the squash)

6

Let the squash cool slightly, then scoop the cooked squash out of the skins and place in a food processor.

7

Add melted butter, milk, and garlic cloves. Process until smooth or your desired texture.

8

Open your Costco sirloin. Carefully pour all the liquid into a liquid measuring cup. Add beef broth to that same measuring cup until the liquid line hits exactly 3/4 cup. Set aside.

9

Melt 1 tbsp of butter in a small skillet or saucepan over medium heat. If using garlic or herbs, toss them into the melting butter for 30 seconds until fragrant. Sprinkle in 1 tbsp of flour. Whisk continuously for 1 to 2 minutes until the mixture turns a light golden-brown color and smells slightly nutty.

10

Slowly pour your 3/4 cup of combined beef liquid into the roux in a slow, steady stream while whisking vigorously to avoid any lumps.

11

Whisk in the soy sauce and black pepper. Bring the gravy to a gentle simmer. Let it bubble gently for 2 to 3 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon. Taste it, and add salt only if necessary. Turn the heat to low.

12

Gently fold your pre-sliced Costco sirloin pieces directly into the warm gravy. Let them sit in the hot gravy over low heat for only 30 to 60 seconds just to take the chill off and heat them through.

13

Serve the steak & gravy over the warm mashed squash and add the roasted carrots on the side. Enjoy!
