A cozy Italian-inspired soup loaded with ground beef, tender beans, ditalini pasta, and fresh spinach in a rich tomato broth.

Heat a large pot over medium heat and lightly spray with avocado oil.

Add onion, carrots, and celery. Cook 5–7 minutes until softened.

Add ground beef and cook until browned, breaking it up as it cooks. Season with salt and pepper.

Stir in garlic and tomato paste; cook 30–60 seconds until fragrant.

Add crushed tomatoes, bone broth, beans, sugar (or sweetener), and baking soda if using. Stir well.

Bring to a gentle boil, then lower heat and simmer for 20-30 mins.

Stir in spinach and parm and cook just until wilted. Adjust seasoning to taste.
