For the sweet potato carrot mash
Instructions
Preheat the oven to 325 degrees F.
Pat the chicken thighs dry with paper towels, then season on both sides with salt. Heat a large Dutch oven over medium-high heat, add the oil, then add the chicken. Sear on each side until golden, about 2-3 minutes per side.
While the chicken is searing, add the soy sauce, miso, maple syrup, rice vinegar, chicken broth, ginger and garlic to a small bowl or jar and stir until combined. Pour the mixture over the seared chicken.
Cover the Dutch oven and place it in the oven for 45 minutes to 1 hour, or until fully cooked and tender. Remove the chicken and shred with two forks.
Return the chicken to the sauce and toss to coat.
Add sweet potato and carrot chunks to a medium-large pot and cover with at least 1" of water. Then, bring up to a boil. Once boiling, season generously with salt & reduce the heat to a gentle boil (about medium heat). Let cook for 10 minutes, or until fork tender.
Drain off water and allow the sweet potato and carrots to cool down for a few minutes before transferring to a food processor along with the butter, greek yogurt and salt to taste. Blend until smooth, stopping to scrape down the sides as needed.
Serve the miso maple braised chicken over a bed of sweet potato carrot mash, then pour on some of the reduced sauce and garnish with sesame seeds. Enjoy!
