
Mapo Tofu Noodles

Silky blended tofu sauce coats fresh egg noodles, topped with spicy stir-fried beef, chili crisp, and green onions for a bold, comforting bowl.

Instructions
Place a frying pan on medium heat and add in avocado oil. Once hot, add in the minced garlic and sliced onions. Fry for one minute until aromatic.
Next up, add in your spicy paste of choice, fry for 30 seconds, then add in the coleslaw mix and ground meat. Stir fry for a further 5 minutes.
Then add in rice vinegar, Chinese 5-spice, and ground sichuan pepper. Stir to combine and cook for a further 5 minutes until the meat has browned and cooked through.
Use an immersion blender (or standard blender/processor) to blend drained silken tofu until very smooth, then add in honey, peanut butter, soy sauce, garlic, and seasonings. Blend again until fully combined.
Taste and adjust salt to taste.
Add tofu sauce to the drained noodles and thin out as needed with the noodle water. Warm the sauce in the pot slowly (don't let it boil).
Once warm, serve the meat over the noodles and add chili crisp oil, sliced green onion, and sesame seeds.
