
Korean BBQ Pulled Pork

Slow-cooked pork tenderloin bathed in a sweet-spicy gochujang BBQ sauce — perfect for piling onto sweet potatoes, nachos, or mac and cheese.

Instructions
To make the asian bbq sauce, whisk the mixture thoroughly until the brown sugar completely dissolves.
Simmer over medium-low heat for 3 to 5 minutes, stirring constantly.
Remove from heat once the sauce thickens slightly and bubbles gently. Set aside.
Pat the sliced pork tenderloin chunks with a paper towel and add the seasoning rub.
Place the seasoned tenderloin into the bottom of a slow-cooker.
Add diced onion, then BBQ sauce and water. Stir slightly to combine.
Cover with the lid and allow the pork to cook on low for 6-8 hours until the internal temperature hits 190-200°F.
Allow it to rest for 15-20 minutes before shredding with two forks.
If your sauce is still watery, heat it over medium heat on the stovetop until it thickens. Mine didn't need it!
Mix shredded pork into the remaining sauce and serve over nachos, mac and cheese, baked sweet potatoes and more!
