Kodiak Pumpkin Choc Chip Muffins

Cozy, protein-packed pumpkin muffins studded with melty chocolate chips — perfect for a grab-and-go breakfast or wholesome snack.

Preheat the oven to 350°F.

In a large bowl, add the pumpkin, egg, milk, melted butter, and monkfruit (or other sweetener) and mix.

Add the kodiak pancake mix, ground chia seeds, pumpkin pie spice, baking soda, and cinnamon. Mix until just combined.

Stir in 1/2 cup chocolate chips. (Reserve some for topping)

Spray a silicone muffin tray with avocado oil, then divide the muffin batter into 8.

Top with remaining chocolate chips and push them into the top of the batter.

Bake for 20-23 minutes, until a toothpick inserted comes out clean.

Allow to cool for 20 minutes before removing from the tray and placing on a wire rack to cool fully.
