
Italian Sausage Rosé Rigatoni

Higher-protein rigatoni tossed in a blended marinara-cottage cheese sauce with savory Italian chicken sausage and steamed broccoli.

In a large pot of salted boiling water, add the noodles and cook for 12 minutes or according to package directions.
Reserve about 1/2 cup pasta water, and drain the rest.
In a bowl, blend the marinara sauce, cottage cheese, garlic powder, and salt & pepper (to taste) using an immersion blender until no curds remain.
Heat a large frying pan over medium heat and add the ground sausage. Break it up into small pieces and allow to fully cook.
Reduce the heat to low and pour in the blended sauce, steamed broccoli, and drained noodles.
Heat until the sauce is warm and thickened. You may need to use the reserved pasta water to achieve your desired thickness.
Serve topped with freshly grated parm and red pepper flakes!
