
High-Protein Pesto Chicken Alfredo

Creamy cottage cheese alfredo gets a tomato pesto twist, tossed with protein fettuccine and tender grilled chicken for a cozy, macro-friendly dinner.

Bring a large pot of water to a boil. Salt the water, then add your dry pasta and cook until al dente. Reserve about 1/2 cup pasta water, drain and set the noodles aside.
Use an immersion blender (or regular blender) to combine cottage cheese, milk, seasonings, pesto, and nutritional yeast. Add pasta water 1 tbsp at a time until desired consistency is reached and the sauce blends smooth.
Turn the stove burner to low and pour the sauce into the same pot that was used to boil the pasta. Warm the sauce slowly, stirring constantly.
Add the drained fettuccine and stir to coat the pasta. You may need to add more pasta water to thin the sauce.
Plate the pasta with sliced grilled chicken, fresh grated parm, basil, and red pepper flakes.
