
Ground Beef Bowl with Pineapple Salad

Seasoned ground beef and crispy air-fried sweet potatoes meet a bright pineapple salsa for a fresh, flavor-packed bowl that comes together fast.

Wash then chop the sweet potatoes into 1/2 inch cubes. Toss them with avocado oil and the listed seasonings. Air fry at 400F for 8-10 minutes, tossing halfway through.
In a large skillet, preheat to medium heat and spray with oil. Once hot, add the beef and press down to flatten it. Allow the beef to cook for 2-3 minutes untouched, then flip it and break it up.
Once the beef is almost fully cooked, add your taco seasoning packet and 3/4 cup water. Mix and cook until the sauce has thickened.
In a bowl, combine all chopped veggies and juice of 1/2 a lime. Add some salt and pepper and taste to adjust seasoning.
Serve the sweet potatoes and beef with a drizzle of tzatziki sauce (mine was watered down), pickled red onions, and additional lime slices.
