Instructions
Heat a small saucepan over medium heat.
Add the minced garlic, ginger paste, soy sauce, ketchup, 2 tbsp gochujang, sugar, and rice vinegar to the pan and mix until combined.
Cook for 2-3 minutes, stirring frequently until thickened.
Add the chopped/shredded chicken and mix until chicken is coated. Set aside.
Mix flour, baking powder, and seasonings in a bowl until combined.
Add the yogurt and extra 1 tbsp gochujang and mix until a crumbly consistency forms, then knead with your hands until a dough ball forms.
Cut the dough into 8 small portions/balls. Flatten them as much as possible, then add the chicken filling and mozzarella, folding up the edges to seal the ball.
Grease a pan and cook over medium heat for 3-4 mins on each side until golden.
To make the dipping sauce, mix all listed ingredients in a small bowl until combined.
To reheat: airfry on 400°F for 4-5 minutes until heated through and crispy on the outside.
Serve with sweet & spicy sauce to dip!
