In a small pan, pour in the tomato sauce, water, and spices. Taste and adjust spice to your preference.

Turn the heat to medium and let the sauce come to a simmer. Use a spatula to make 2 wells in the sauce, and crack the eggs into them. Cover the pan with a lid and cook for 4-5 minutes, or until the egg whites are set and the yolks are still slightly runny.

Transfer the eggs and sauce to a bowl, garnish with black/red pepper, green onions, and serve with toasted crusty bread or sourdough.
