Preheat convection oven to 420°F.
On a baking sheet, spread panko breadcrumbs in a thin layer. Spray breadcrumbs with baking spray until lightly coated. Bake for 3-5 minutes or until golden brown. Remove from oven and place toasted panko breadcrumbs in a bowl.
Line the same baking sheet with parchment paper.
In another bowl, add egg, mayonnaise, mustard, flour, and seasonings. Whisk until smooth. Add chicken strips and, using tongs, toss the chicken to coat thoroughly in the sauce.
Using tongs, pick up one piece of chicken at a time and place it in the bowl of panko. Cover with panko, then press down with tongs to adhere the breadcrumbs to the chicken strip. Transfer to the prepared baking tray. Repeat with the remaining chicken.
Spray the top of each strip lightly with baking spray. Bake for 15 minutes, flipping halfway through, until chicken is cooked through.
