
Creamy Coconut Turmeric Orzo with Salmon

Heat a large saucepan over medium heat. Spray a small amount of avocado oil over the salmon and toss with the seasoning mixture until evenly coated on all sides.
Place the salmon skin-side down and allow to cook for 4-5 minutes before flipping. Cook for 2 minutes, then 1-2 minutes on each side until the internal temperature hits 145F. Remove from the pan and set aside.
In the same pan, spray the bottom with avocado oil and add the diced onions. Sauté for 3-4 minutes before adding the orzo to toast along with the minced garlic and seasonings. Cook for another 3 minutes or until the spices and garlic are fragrant.
Add the coconut milk and broth/water and turn up the heat to bring to a boil. Once boiling, reduce the heat back to medium and cover with a lid. Allow the orzo to simmer, stirring occasionally, for about 5-6 minutes, then remove the lid.
Continue stirring every minute or so until the liquid has reduced to a sauce and the orzo is cooked through.
Serve the salmon over the orzo along with steamed broccoli, sesame seeds, and green onions.
