Cinnamon Pear Crumble

A cozy, naturally sweetened pear crumble with a golden oat topping and warm cinnamon spice. Perfect with vanilla yogurt or ice cream.

Preheat oven to 350°F.

In a bowl, combine peeled and diced pears, vanilla, 1 tsp cinnamon, and lemon juice. Mix, toss in the corn starch to coat, and pour into a loaf pan greased with coconut oil.

In another bowl, combine oat flour, oats, coconut oil, maple syrup, and remaining cinnamon. Mix to form the crumble.

Dump the crumble mixture over the pears and spread out evenly (don't press it down).

Bake for 45-50 minutes or until the crumble has browned on top.

Remove from the oven and allow to cool in the loaf pan.

Serve over vanilla yogurt or with ice cream!
