
Chipotle Honey Shrimp & Mango Salsa

A spicy-sweet chipotle honey shrimp bowl with roasted sweet potatoes, fresh mango salsa, creamy avocado, and a drizzle of honey hot sauce.

In a medium bowl, mix chipotle paste, honey, and seasonings listed. Mix to combine and toss with shrimp to coat them evenly. Leave the shrimp to marinate for 1-2 hours (optional).
Preheat your air fryer or oven to 400°F. Chop sweet potatoes to desired shape/size, toss with avocado oil, and the same seasonings as the shrimp.
Cook sweet potatoes for 10-12 minutes or until lightly browned and a fork easily goes all the way through, shaking the basket or flipping them over halfway through.
Dice your mango, cucumber, and tomato and add to a bowl with corn and edamame. Squeeze the lime juice directly into the bowl, add salt and pepper, and mix. Set aside
In a skillet on medium heat, spray lightly with avocado oil and add marinated shrimp. Cook for 3-4 mins on each side or until opaque.
If the sauce from the shrimp is very watery, remove shrimp and reduce sauce over the stove until thicker, then toss with the shrimp again.
Assemble your bowl with shrimp, sweet potatoes, mango salsa, and mashed avocado.
Drizzle with honey and hot sauce and enjoy!
