Smoky-sweet slow cooker shredded chicken paired with roasted Japanese sweet potatoes for a cozy, protein-packed bowl that's easy to meal prep.

In a slow cooker, combine chipotle pepper sauce, honey, and the listed seasonings. Once mixed, add the chicken breast and toss to coat.
Cook on low for 4-6 hours or high for 2-3 hours. Ensure the internal temperature reaches at least 165°F.
Preheat the oven to 400°F.
Toss the chopped sweet potatoes in avocado oil and the same seasonings as the chicken. Add to a parchment paper-lined sheet pan.
Bake for 25-35 minutes, flipping halfway, until golden and fork tender.
Once the chicken is cooked, remove it from the slow cooker and use 2 forks or a hand mixer to shred the chicken.
Add the shredded chicken back to the sauce and mix to combine.
Build your bowl with shredded lettuce, pickled red onions, sweetcorn, sweet potatoes, and your shredded chicken.
