
Chipotle BBQ Pulled Pork

Tender, smoky pulled pork slow-braised in a chipotle BBQ sauce until it falls apart — perfect for tacos, sandwiches, or piled over a baked sweet potato.

Heat a large dutch oven over medium heat and lightly spray with avocado oil. Preheat the oven to 250-275°F.
Pat the sliced pork tenderloin chunks with a paper towel and add the seasoning rub.
Sear all sides of the pork tenderloin (1-2 minutes per side) in the Dutch oven, then remove from the pot and set aside.
Add diced onion and cook 5–7 minutes until softened, then add minced garlic and cook for 1-2 minutes.
Add the BBQ sauce and water/broth and stir until mixed.
Add back in the pork, cover with the lid or aluminum foil.
Transfer the pot to the oven and allow the pork to braise in the oven for 3-4 hours, or until the internal temperature hits 190-200°F.
Allow it to rest for 15-20 minutes before shredding with two forks.
If your sauce is still watery, heat it over medium heat on the stovetop until it thickens.
Mix shredded pork into the remaining sauce and serve! Tacos, sandwiches, over mashed potatoes, and more. Serving idea: pile over a baked sweet potato with guacamole and pickled red onion.
