Ingredients

For the multigrain rice

For the asian carrot salad

Instructions

1

Add the white rice, lentils, quinoa, and barley (or any mixed grains you prefer) to the bowl of a rice cooker (or a pot). Rinse the grains with water and drain multiple times until the water runs clear.

2

Add 1 cup of water to the grains and turn on the rice cooker.

3

Combine the carrot salad ingredients in a small mixing bowl and toss until combined. Set aside to marinate.

4

Combine all the sauce ingredients (including the broth) in a medium saucepan and bring it to a boil. Reduce the heat and let it simmer on low for just 3 to 5 minutes and allow the sauce to thicken slightly.

5

Stir your shredded rotisserie chicken directly into the warm sauce and simmer for another 1 to 2 minutes just until the chicken is heated through.

6

Serve the peanut chicken over the multigrain rice, add the carrot salad, and garnish with sesame seeds and green onions.
